The last ripe olives are harvested from the trees at the end of January to mid-February! These are then pressed together with the equally ripe lemons and processed into this great lemon oil. No flavorings, but the aroma of fresh lemons are what gives this great "summer" oil its flavor!
Once the work is done, the oil press is cleaned and shut down until next autumn.
Tip: Use with fish dishes, carpaccio, bresaola and salads.
